Amount: ca 30 pcs, depending on the moulds used
- 150 ml gel made of Centralsun’s Irish moss
- 300 ml cherry juice
- 3 tsp agar-agar
First, prepare an Irish moss gel. To do this, rinse the algae thoroughly under running water and leave to soak in a bowl of water overnight. In the morning, rinse the algae again and blend it with 1.5 times the amount of water to form a perfectly smooth gel. If it doesn’t get quite silky, pour the mixture through a sieve and store the gel in the fridge. For the gummies, heat the cherry juice and Irish moss gel in a bowl. When the mixture is hot, stir in the agar-agar and whisk for about 5 minutes until the agar-agar is completely dissolved. Quickly pour the mixture into the moulds, chill to room temperature and then place in the fridge for a couple of hours to set.
