RASPBERRY-COCONUT ENERGY BALLS
Amount: 14 pcs
100 g Centralsun’s cashews
20 g Centralsun’s raspberry powder
70 g wholemeal oatmeal
2 tbsp coconut flakes, with more for topping if you wish.
2 tbsp melted coconut oil
50 g juicy dates
1/5 tsp salt
50 ml water
First pour hot water over the nuts and let them soak for 15 minutes, then drain. In a food processor or blender, add all the ingredients and process until a fine, smooth and sticky paste has formed. Add a little water if necessary. Roll the dough into 14 equal sized balls between your hands and cover them with coconut flakes, if desired.
Allow to chill for a little while before eating and store in the fridge.
