RICE PORRIDGE WITH COCONUT MILK, POPPY SEEDS AND LEMON POWDER

- 200 g porridge rice
- 400 ml coconut milk
- 400 ml water
- 1 tbsp poppy seeds
- 1 tsp Centralsun’s vanilla powder
- 1 tsp Centralsun’s lemon powder
- Pinch of salt
- sweetener of your choice
- blueberries for serving
Bring the coconut milk and water to the boil in a saucepan. Add the porridge rice and salt, reduce the heat and let it simmer gently for about 15 minutes, stirring occasionally, until the rice is almost ready. Add the lemon powder, poppy seeds, vanilla powder and any desired sweetener and cook for a further 5 minutes. Turn off the heat and leave to finish cooking for 1-2 minutes under the lid.
Serve hot immediately or cold as a pudding.
