What is freeze-dried strawberry powder?
In freeze-drying, fresh strawberries are frozen and the water is removed in a vacuum straight from ice to vapour, without the fruit thawing or being heated. The taste, aroma and red colour of the strawberries are kept better than in ordinary drying. The dried fruit is then milled into a powder.
In the seedless version the tiny strawberry seeds are removed before milling. The powder is therefore smoother and more even: it dissolves in drinks without grit and suits places where seeds would get in the way – creams, icings, ice cream, macarons, yoghurt. A small residue of seeds is still possible in a natural product.
The only ingredient is strawberry. The sweetness comes from the fruit’s own sugars; nothing has been added. This is a conventionally grown product, not organic.
How to use
In drinks
Stir 1–2 teaspoons into a glass of water, milk or a plant-based drink; add to a smoothie to taste. The powder gives the drink a strawberry taste and a pink to red colour.
With yoghurt, porridge and muesli
Sprinkle a teaspoon over yoghurt, cottage cheese or breakfast porridge. Freeze-dried powder needs no soaking.
In baking and desserts
Add to dough, buttercream, icing, ice cream or jelly mixes. For a smooth result, first mix the powder with a small amount of liquid. The strawberry taste holds up in baking.
Natural colour
A teaspoon of powder colours a cream or icing pink without food colouring.
Not suitable for children under 3 years (manufacturer’s instruction for use).

Origin and quality
The strawberries are grown in Egypt and freeze-dried and milled in Poland. The producer checks every batch for pesticide residues, heavy metals and mycotoxins against EU limits, and every batch passes a metal detector before dispatch. The product is kosher certified and suitable for vegans and vegetarians.
We pack it in Estonia. Colour and taste may vary slightly from batch to batch – a feature of a natural raw material, not a fault.
Storage
Store in a dry place, below 25 °C and away from direct sunlight. Freeze-dried powder draws moisture from the air: close the pack tightly after each use and use an opened pack quickly. The best-before date is on the pack.
Frequently asked questions
What is the difference between seedless strawberry powder and strawberry powder with seeds?
The ingredient is the same – 100% strawberry. The powder with seeds contains the fruit’s seeds and has a slightly grainy texture; the seedless powder is fine and smooth, so it works better in creams, icings and drinks. We also sell the powder with seeds.
Does the powder contain added sugar?
No. The 67.6 g of sugars per 100 g are the fruit’s own sugars, concentrated by freeze-drying because the water has been removed.
Is it organic?
No, it is a conventionally grown product. Batches are checked for pesticide residues against EU limits.
Does the powder lose its colour when heated?
The strawberry taste holds up well in baking; the red tone can fade slightly at high temperatures. In creams and icings that are not heated, the colour stays bright pink.
How many fresh strawberries are in the powder?
Strawberries are mostly water, which freeze-drying removes. That is why the powder is far stronger in taste and sweetness than fresh fruit, and a small amount goes a long way.
