PLEASANTLY WARMING RAMEN
Quantity: 2-3
- 1 l of high-quality vegetable broth
- 3 tablespoons of soy sauce
- Juice of half a lime
- 2 star anise
- 0.5 tbsp Centralsun coconut palm sugar
- 1.5 cm piece of ginger
- 1/3 red chili
- 150 g of shiitake mushrooms
- 200 g of noodles of your choice (rice noodles, shirataki, ramen noodles, soba noodles, etc.)
- 2 large handfuls of coriander
- 1 tablespoon Centralsun dulse seaweed (more if desired)
- 3 bok choy
Preparation:
First put the stock, soy sauce, anise, coconut palm sugar, lime juice, finely chopped ginger, chopped chilli, chopped mushrooms and seaweed into the pot. Bring everything to a boil and cook gently under the lid for 1 hour. Prepare the noodles according to the instructions and place in a bowl. Add the chopped bok choy and the broth with the mushrooms. Serve with cilantro and sprinkle with extra seaweed and sesame seeds if desired.
